Abstract

Amyloids and protein aggregates formed from commonplace whey or plant proteins have found increasingly diverse applications as coatings, food packaging, and carriers in drug delivery. Whey- and plant-derived amyloid materials are attractive biomaterials due to their low cost, thermal and environmental phase transition properties, and ability to survive high temperatures and in non-aqueous solvents. Despite their use as structural materials in synthetic environments, little is known about the limits of amyloid stability at such extreme conditions.
