Abstract

Oxidative stress results from disequilibrium between the production of reactive oxygen species (ROS) and the capacity of antioxidant defenses of the organism. Produced in a continuous and elevated kind, ROS are the origin of oxidative stress with irreversible modifications of lipids, proteins and nucleic acids. Oxidative stress has been incriminated in ageing and pathophysiology of many diseases such as cancer with a defect in cancer cell elimination, cardiovascular diseases with alteration of blood vessel wall, and inflammatory diseases because ROS are essential actors of the defense not related to antibodies. For protection against oxidative stress, organisms have developed an arsenal of antioxidants, with enzymes (superoxide-dismutase, catalase and glutathioneperoxidase), vitamins (A, E and C) as well as molecules with other functions (uric acid, bilirubin and melatonin).
