Abstract
Summary An instrument has been developed to measure the spreadability of butter. Although the instrument was much more sensitive than consumers in detecting differences in spreadability, results obtained with it were closely correlated with those obtained from consumer-preference studies. Hardness, as obtained with a sectility apparatus, has been found to be closely related to spreadability.
