Abstract

A new and sensitive solid phase spectrophotometric method for the determination of amaranth colorant in foods has been developed, where β-cyclodextrin polymer (β-CDP) is used as a solid phase adsorbent to preconcentrate amaranth from aqueous media. Amaranth on β-CDP is directly determined using solid phase spectrophotometry. The experimental conditions for the determination are pH = 1, temperature 20°C, ionic strength 0.5 mol/L using ammonium acetate, and shaking time 40 min, respectively. The linear dynamic range of concentration is 0.05–4.8 μg/mL. The proposed method has been applied for the determination of amaranth in commercial food samples from local markets with satisfactory results.
