Abstract

When the Difco Bioassay Kit using whey agar and B. subtilis is used for the detection of growth inhibiting substances in milk for cheese manufacture, it is seldom that any antibiotic other than penicillin will be detected even though their concentrations will prevent the growth of the starter culture in the cheese milk. Before being analyzed for growth inhibiting substances milk samples can be frozen and stored for at least 12 weeks without reducing the accuracy of the results.
