Abstract

The solubility of lactate salts, L(+) and DL(±) forms of calcium and zinc lactate in water at temperature between 5 and 80 ‡C, was measured and empirical equations were obtained by regression of solubility-temperature data. The equations can be used to calculate the solubility of calcium and zinc lactate at a given temperature. The change in solubility of L(+) and DL(±) calcium and zinc lactate in water-ethanol mixture at 20 ‡C was also investigated. The solubilities of calcium and zinc lactate were lowered by the addition of ethanol to the solution.
