Abstract
<b><sc>Abstract.</sc></b> <b>At present, it has become one of the development directions of non-destructive prediction of meat quality to obtain the deformation characteristics of chilled meat and predict its quality parameter by impacting the surface of chilled meat with airflow. The reasonable selection of air jet nozzles to obtain a relatively concentrated airflow is one of the key factors affecting meat deformation. Based on three dimensional incompressible Navier-Stokes equation and k-ε turbulent model, SIMPLEC algorithm was applied to solve a discretization governing equation, three different types of nozzle were designed with contraction curves such as Witozinsky, Bicubic, Fifth degree polynomial curves. The CFD method was used to simulate 3D flow field of nozzle and the flow field characteristics of different nozzles were analyzed. Taking the attenuation of the axial velocity and the change of the cross-sectional velocity at a certain distance from the nozzle as the indicators after the air jet is ejected, the results show that the Witozinsky nozzle has a preferable concentricity, and its axial velocity decays gently. At the section 40mm away from the nozzle outletï¼the radial velocity distribution of this section still conforms to the Gaussian curve distribution. This simulation analysis can provide a certain research basis for the further optimization design of air jet nozzles.</b>
