Abstract

Oral food challenges (OFC) are considered the ‘gold standard’ to determine allergic reactions to food. Allergists use cooked or baked egg food preparations for OFC under the assumption that allergen levels decrease during the heating process. The effects of heat on chicken egg allergens have not been thoroughly investigated. The aim was to compare the levels of two major egg allergens in uncooked and cooked/baked foods.
