Abstract

Today there is an increasing demand by consumers for safe and healthy food products. In any food manufacturing unit, the determination of shelf life is considered an important and significant step of good manufacturing practices. Shelf life testing helps to determine how long a food product is safe for consumption. To ensure the quality and safety of food, proper as well as accurate techniques should be used to support the evaluation of the shelf life of food products. Inappropriate shelf life of food products manufactured by any industry may lead to some negative consequences affecting the reputation of the industry. Thus, it is highly recommended for food business operators to have certain techniques available for the prediction of shelf life of the manufactured products under a given set of conditions for its storage. Moreover, for any shelf life study, the collection of preliminary data based on product processing as well as storage conditions and the factors affecting its shelf life play a very important role.
