Abstract

We screened of lactic acid bacteria (LAB) for silage inoculants by using a model system for ensilage. For 16 strains of LAB selected as having high lactic acid production in a liquid culture medium, we examined lactic acid production in the model system. Among them, strains 5–6 and 5–29 had the highest lactic acid production due to higher growth rates than those of the other strains and strain 1–10 was more acid-tolerant than the other strains. The specific growth rate of strain 1–10 was lower than those of strains 5–6 and 5–29. Strain 1–10 was identified as Lactobacillus casei. Strains 5–6 and 5–29 were identified as Lactobacillus plantarum.
