Abstract
The US Public Health Service (1) has identified an increased span of healthy life as a goal for Americans in the 1990s. Cardiovascular disease is prevalent among older women, and its prevention is a key to good health and independence in the later years. Recommendations to decrease fat intake (1–5) are intended to limit intake of saturated fatty acids, the dietary fat most associated with coronary heart disease (5). Elderly American women currently consume about 36% of their energy from fat and between 12% and 13% from saturated fat (6).
