Abstract
SummaryThe influence of various factors on the alcohol insoluble solids content (AIS) and viscosity of tomato juice was studied. The results showed that different levels of fruit ripeness affected AIS but exposure of the fruit to sun or shade had no effect. A late planted crop had a higher AIS than one planted earlier. Pickings within a season differed significantly in both ATS and viscosity but the cultivar χ picking interaction was not significant.
