Abstract

Swallowing disorder has been becoming a serious issue with increasing in elderly people, because pneumonia caused by aspiration is often the death of the aged. An increase in liquid food viscosity is effective to protect the aspiration, and thus a lot of thickener additives are used to raise the viscosity of drinks or liquid care foods. Our purpose is to investigate what kind of rheological characteristics of the viscous liquid give a good swallowing feel in a throat. Therefore, we numerically analyzed the liquid squeezing flow in the container of the creepmeter. As a rheological model, a power-law model was applied to the simulation of the liquid food flow. The motions of a throat and the plunger in the creepmeter were simulated using a moving grid method. In the creepmeter, the plunger thrust was computed, and the results qualitatively agreed with the measurements for liquid foods. Rheological studies on the squeezing flow in the creepmeter are expected to enable the rheological prediction of a swallowing feel in a throat for the liquid foods.
