Abstract

From conductivity measurements, the influence of counterion valency on the nature of intermolecular interactions in gellan solutions is discussed. Consequently a difference in the mechanism of gelation is proposed between monovalent and divalent counterions. This difference may explain the higher values obtained in the mechanical properties of gellan gels in presence of divalent counterions.
