Abstract

The work attempted to study a new method for tea residue protein extraction. In this study, three kinds of microemulsion systems were constructed and their phase behaviors were investigated and compared. The conductivity, viscosity, surface tension and particle size were used to characterize the reverse microemulsion. Then, three kinds of microemulsion systems were used to extract tea residues protein. Based on the results of tea residues protein extraction yield with orthogonal optimization, CTAB-Tween80 microemulsion was more robust to extract protein, and the tea residues protein extraction yield could reach 42.1%. This study indicated that the CTAB-Tween80 reverse microemulsion has the potential ability to extract the tea residue protein.
