Abstract

Normal-phase high-performance liquid chromatography was used to determine the retinoid content of 32 fish and fish product items. Canthaxanthin was determined with reversed-phase chromatography in rainbow trout and in its roe samples. Samples represent the range of edible fish species and products of such species that are most common in the Finnish diet. The main retinoids found were all- trans-retinol and its 13- cis-isomer and 3,4-dehydroretinol. 11- cis-,9,11- cis-, and 9- cis-retinol were also present. The highest concentrations of retinoids were measured in cod liver oil, liver and roe samples, and fish with high fat content. All- trans-canhaxanthin was detected in rainbow trout and its roe. This work was part of a comprehensive study carried out to determine the retinoid and carotenoid composition of Finnish foods.
