Abstract

Abstract A non‐radioactive method based on the determination of acetic acid was developed for detection of chitin deacetylase (E.C. 3.1.5.41) in crude extracts of Mucor rouxii (DSM 1191) and Absidia coerulea (ATCC 14076 and NRRL 1315). The activity of chitin deacetylase from submersed cultures of Mucor rouxii was enhanced by the addition of Chitin 50, a commercial, water soluble chitin with a degree of acetylation of 59 %.
