Abstract
Contrary to previous documentation, it has been shown that nisin solution is not stable to autoclaving at pH 2. It is most stable at pH 3 (<5% activity loss at 115 °C 20 min -1 ) while all values below and above this show a marked decrease in activity, especially those furthest removed from pH 3.
