Abstract

Eggs from 22-wk-old, Single Comb White Leghorn hens were collected from the onset of production to 180 days of the laying period. Egg and yolk weights and egg cholesterol values were measured. As the age of laying hens progressed, egg weight, yolk size in both absolute weight and a percentage of the egg, and egg cholesterol content in milligrams per egg increased, but the yolk cholesterol concentration in milligrams per gram of yolk decreased during the first 6 mo of egg production. A new term for egg cholesterol value, milligrams per gram of egg, was suggested.
