Abstract

AbstractFourier‐transform infrared spectroscopy were used to analyze 42 commercial rice samples from 7 different rice varieties available in Vietnamese market. Infrared data were recorded by attenuated total reflection mode (ATR mode). The obtained data from the analysis were collected and statistically proceeded by the virtue of chemometric method including Principal Component Analysis (PCA), Partial Least Squares (PLS) and Orthogonal Partial Least Square‐Discriminant Analysis (OPLS‐DA). The combination of infrared signal data (FTIR fingerprints) and suitable data processing method brought about the ability to distinguish types of rice examined in this study. When PCA and OPLS‐DA techniques are applied, 100 % of rice samples is correctly classified. The results illustrated that the method utilized in this study has been a quick and powerful tool to successfully classify the varieties of rice on the market contributing to rapid detection of mixing and falsifying the rice categories.
