Abstract

Almost my favourite book this last twelve months has been Barak Kushner’s study of ramen noodles in Japan. I like to think of it (very self-regardingly and entirely inaccurately) as a Prospect Book that got away. Anyway, the finished book is available as follows: Slurp! A Social and Culinary History of Ramen – Japan’s Favorite Noodle Soup (Leiden: Brill, 2012, £50.07). Barak Kushner has agreed very kindly to rework his introduction to the book and I hope you find it as instructive as I do.
