Abstract

The interactions of flavonoids quercetin and its glycoside, rutin with the short chain alcohols (methanol, ethanol, propanol) were investigated by means of the fluorescence spectroscopy, UV–Visible spectrometry and conductivity measurements. From the experimental data the quantities such as Stern-Volmer quenching constant, bimolecular quenching constant, modified Stern-Volmer constant, effective quenching constant, apparent association constant, activation Energy for electrical conduction were determined. The obtained results show that the mixtures of quercetin with propanol and rutin with ethanol are characterized by their strongest interactions.
