Abstract

AbstractThe studies were carried out as part of the quarterly environmental monitoring of farms that supply raw meat in the Krasnodar Territory, included in the specialized raw material zone of the Southern Federal District and the North Caucasian Federal District, for children's and functional nutrition, in the autumn-winter period (2020 and 2021). The research was carried out with the aim of improving the sanitary state of feed in raw material zones and the physiological state of animals and the quality of meat products obtained from them. The paper presents the results of the following studies: microbiology of meat and by-products (liver, heart), as well as various feed products produced in this raw material zone or used for fattening bulls for meat; the presence of antibiotics in meat and by-product; an express method for determining general toxicity as an indicator of the biological safety of feeds, determined using biotesting on ciliates - stylonichia. Conclusions are made about the quality of microbiological indicators and safety of meat raw materials, by-products and various feed products from the supplying farms of the Krasnodar Territory. The prospects for the use of raw meat obtained from the represented farms in the environmentally friendly production of meat products for baby food have been determined.
