Abstract

The pyrolysate of lycopene at 300,500 and 800 ℃ in nitrogen of 9% oxygen was analyzed by pyrolysis gas chromatography and mass spectrometry(Py-GC-MS).The results showed that:1) The pyrolysates at the three pyrolysis temperatures always contained olefin compounds and a small quantity of lycopene,and the relative content of olefin compounds increased significantly with the rise of temperature.2) lower pyrolysis temperature facilitated the generation of aldehydes,ketones and alcohols.3) The pyrolysis products at all the test temperatures contained some key aroma compounds,such as geranial,1-methylacetophenone,pseudo-ionone,farnesol,damascone and calacorene,etc.4) The kinds and yields of indenes and naphthalenes increased gradually with the rise of pyrolysis temperature.
