Abstract
La propionicine PLG-1, une bacteriocine produite par Propionibacterium thoenii P127, a ete purifiee jusqu'a homogeneite par precipitation au sulfate d'ammonium suivie d'une chromatographie sur colonne d'echange d'ions et d'une chromatographie liquide haute-performance en phase inverse. D'apres l'analyse de la composition en acides amines, la propionicine PLG-1 a un poids moleculaire calcule de 9 328 et contient 99 residus d'acides amines, dont 42% sont hydrophobes (Ala, Ile, Leu, Val et Pro). Une sequence de 10 acides amines de la partie N-terminale a ete identifiee : NH 2 - 1 Asn- 2 Val- 3 Asp- 4 Ala(Thr)- 5 Arg- 5 Thr(Cys)- 7 Ala(Thr)- 8 Arg- 9 Thr(Ala)- 10 Pro. Aucune homologie de sequence avec d'autres bacteriocines de bacteries lactiques n'a ete trouvee en consultant la base de donnees SWISS-PROT.
