Abstract

Honey has been used traditionally as food and medicine. Honey possesses antibacterial activity, stimulates tissue regeneration and has been found to help on wound healing. Manuka honey, derived from the flowers of the Manuka bush (Leptospermum scoparium) has significant antibacterial activity. Methyl glyoxal found in Manuka honey is an antibacterial compound. Although proteins constitute low amount, in honey they have an important functional role. Here we have purified and characterized proteins from the Manuka honey.
