Abstract
Humpback grouper (Cromileptes altivelis) commonly known as rat grouper is one type of marine fish that has high nutritional value but is rarely used as a fishery product. In this study, we investigated the proximate content and types of amino acids found in the flesh of the humpback grouper (Cromileptes altivelis). The method used in this study was the content of proximate and amino acids in humpback grouper (Cromileptes altivelis). The results showed that the flesh contained 27.59% protein, 0.87% ash, 59.67% water, 7.25% fat, and 4.63% carbohydrates. Meat in humpback grouper (Cromileptes altivelis) contains 86.157,72 mg/kg (50.59%) essential amino acids, 84.158,72 mg/kg (49.41%) non-essential amino acids.
