Abstract

Microbiological bioassay employing the test protozoan Tetrahymena pyriformis W is a relatively simple, rapid, and cheap method of investigating protein quality in food products. The method is described in detail to enable students in colleges and universities to carry out experiments for the evaluation of protein quality. It gives the student the opportunity to see the effect of the amino acid composition of the protein and how a unicellular organism may be used in nutrition science. Student reports show that the students have enjoyed conducting the experiments.
