Abstract
Summary Human milk contains proteolytic enzymes. About one-third of the proteolytic enzymes added to cow's milk in the processing of enzyme-treated milk survive pasteurization. Human milk and pasteurized enzyme-treated cow's milk contain substantially equal amounts of proteolytic enzymes. Raw or pasteurized cow's milk contains about one-fifth as much proteolytic enzyme as either raw human milk or pasteurized enzyme-treated milk. These results provide a new concept in the nutrition of infants as well as others who do not tolerate cow's milk.
