Abstract

Rice industry produces large amounts of waste. Rice processing involves some streams of milling steps to produce several materials including rice bran, husk, straw, germ, broken rice, and brewers’ rice. In developing countries, these materials are considered as by-products and usually discarded as waste or used in animal feed. Indeed, the compositions of by-products are largely depended on the efficiency of the milling system and type of rice. The milling process is the crucial stage in rice production as it contributes to the cooking, sensory, and nutritional quality of rice. With the improvement of rice processing technology and the development of the social economy, consumers are chasing delicacy and taste. As rice processing becomes more and more refined, the extraction of phytochemicals in rice under various conditions is worth to discuss further. This chapter provides different physicochemical processing treatment and their impact on phytochemicals in rice. The production of by-products from the rice milling process is also highlighted in this chapter.
