Abstract

A new mold of Penicillium rugulosum, isolated from rot dahlia tubers, was found to produce a very active inulin-hydrolyzing enzyme. The optimal conditions for enzyme production and action were determined. The crude enzyme preparation (29–32 U/mg dry matter) rapidly hydrolyzes inulin suspensions and Jerusalem artichoke extracts. It might be used industrially to prepare highly concentrated fructose syrup.
