Abstract

A process for the production of d-psicose from d-talitol, d-tagatose or d-galactitol has been developed. A bacterium isolated from soil, Alcaligenes sp. 701, was found to accumulate d-psicose from d-talitol, d-tagatose and d-galactitol. A potent strain 701B was derived from the parent strain by obtaining a mutant that could grow faster on l-sorbose. The yields of d-psicose accumulated by 701B in the reaction medium from d-talitol, d-tagatose and d-galactitol were about 90%, 80% and 70%, respectively. This is the first report concerning d-psicose production by microbial reaction.
