Abstract
HIGHLIGHTS Low calorie Bitter gourd-Kiwifruit beverage has good antioxidant potential and sensory acceptability. Product optimization showed about 80% reduction in calorie value. Optimized beverage showed good storage stability at ambient conditions for a period of six months.
