Abstract

Abstract We have been working for several years on the idea of replacing normal atmospheres with gases that are lethal to enzymes and microorganisms in fresh fruits and vegetables to extend their useful postharvest storage period. This would supplement the effects of controlled atmosphere storage with protection from enzymic breakdown and microbial spoilage. Thus far we have been successful in preserving plugs of apple and potato.
