Abstract
In order to know the characteristics of slaughterhouses infrastructure a survey was made to all slaughterhouses of Chile in 1997. The data were collected by personnel of the Agricultura) and Livestock Service (SAG). The results of 101 slaughterhouses surveyed indicate that the average of required equipment in infrastructure was 41.2%; slaughterhouses over this average showed greater volumes of monthly slaughter. It is outstanding that no slaughterhouse had all the elements required. The most frequent elements were yards, tecle in zone of entrance and drain, fence, around the slaughterhouse, chute from the admission path to the work room, refrigerator room and rail to hang animals during the process. The less frequent elements were: urgency incinerator room, refrigerator room in the urgency room, automatic hand dryer in the packing room, hand dryer at work entrance, lavatory with drinkable water in observation yard and urgency room. The elements requered were qualified as good or fair An important improvement, of the slaughterhouses of the regions with deficient infrastructure lince the application of the Meat Law, was observed. The better equiped regions were the Metropolitan, II and XII, and the less equipped: I, II and VIII regions.
