All articles presented in this review followed the microbiological parameters for fresh Minas cheese established by the National Health Surveillance Agency (NHSA) through Collegiate Board Resolution (CBR) No 12 of January 2001
Summary
Cheese is one of the most consumed foods worldwide. As a product derived from milk, cheese has a favorable nutritional composition for the development of undesirable microorganisms (REGINATO et al, 2020).
