Abstract

We are proud to introduce the proceedings of the International Conference on Food Production and Processing of Agricultural Raw Materials (P2ARM 2020). The conference was organized by Voronezh State University of Engineering Technologies and held in Voronezh, Russia on February 26-29. The event is dedicated to the 90th anniversary of VSUET - one of the most recognized engineering schools in Russia, that expertise exclusively on technical support of food and beverage industries.The University was established in 1930 as Voronezh Institute of Food Industry. During the Great Patriotic war in 1942-1943, the Institute was evacuated to the city of Biysk, from where it was returned to Voronezh only in 1944. Today Voronezh State University of engineering technologies is one of the leading technical universities in the Central black earth region and actively develops international inter-University cooperation.The Conference also provided an interdisciplinary forum for researchers, practitioners and scholars to present and discuss the most recent innovations and advances in the field of design and nutrition analysis of food products, disposing of the wastes of farming and food industry, as well as digitalization of such fields of engineering.The aim of these proceedings is to gather experts’ works and present the results of their researches in the field of food, agriculture, and natural resources to support world food security. We are also point out that link between natural resources and agriculture can improve the quality and food security of the world’s population.Most of the articles devoted to technologies of extracting, producing, preservation, refrigeration and sublimation of food and chemical components, raw materials, others consist the information about industrial equipment for food producing and utilization.The volume is comprised of almost three hundred quality manuscripts addressing various challenges of the food industry and describing recent engineering advances in the field. All the papers were peer-reviewed by two reviewers most of those are editors, authors of affiliates of the Proceedings of VSUET journal. As a result, more than two hundred of manuscripts were qualified for publication. The contents of the volume are organized into 7 sections corresponding to specific topics of the conference:1. Technologies of processing, storage and recycling of plant crops2. Technologies of processing, storage and transportation of animal raw food.3. Technologies of extraction and utilization of fats, oils and flavors.4. Technologies of producing sugars, saccharine products and alcohol5. Wastes management, quality control and manufacturing execution in agricultural materials processing6. Equipment, engineering facilities, methods and apparatuses for agricultural materials processingWe would like to express our highest appreciation to the organizers, members of the program committee and editorial board of the Proceedings of VSUET journal for their priceless support. It would be impossible to successfully manage P2ARM 2020 and ensure the high quality of the proceedings without their competences and dedication. In addition, we would like to express our gratitude to an incredible number of authors for presenting their research results at the conference and for their perseverance in all periods of working on the volume.
