Abstract

Today, the pulsed electric field (PEF) treatment is a popular nonthermal process used for the preservation of foods and food products. PEF processing of liquid foods keeps the freshness of foods and retains the vital components, such as vitamins. The literature review for PEF treatment reveals its potential use in the preservation of food products. The PEF technique is considered superior than the traditional thermal techniques for food processing.
