Abstract

The transport properties, effective conductivity and diffusivity, of the dehydrated products that can control freeze drying in given conditions seem to be greatly influenced by the porous matrix structure as a consequence of the freezing conditions prior to the operation. In this work an electrokinetic analysis of different frozen samples has been carried out to set up an explanatory basis. The electrical resistance measurements have been found to be valuable data for indicating the relation between transport properties and freezing conditions.
