Abstract

Agrowaste utilization in the fruits and vegetable processing industries is challenging and arduous exertion. The discarded portions need to be converted into profitable endeavors to augment the income of the farmers. Various processes like extraction of bioactive components, enzymes and pigments, fermentation, application of biotechnology for bioconversion, etc. were successfully employed to exploit the pineapple processing waste (PPW). In this chapter, the focus is on the extraction of bromelain enzyme, vermicomposting, feed and silage, pectin extraction, and fiber production from PPW. This work is an attempt to solve the pineapple waste menace in Northeast India by highlighting the ongoing work and technologies on the utilization of pineapple waste that is appropriate for the region.
