Abstract
テクスチャーは食品の嗜好性および摂食の安全という両面で重要である．近年の超高齢社会においては，咀嚼および嚥下困難者の摂食能力に配慮した食品（いわゆる介護食）の開発が活発化しており，介護食は他の加工食品に比べてテクスチャーの重要性が高い．介護食のテクスチャーデザインは食品産業における最も重要な課題の1つである．介護食のテクスチャーは，摂食過程で飲み込みやすい食塊を容易に形成しうるよう，ハイドロコロイドを用いて粘弾性を調節しなければならない．本稿では，食品の必須要素としてのテクスチャーの重要性とともに，テクスチャーを改良するための素材としてのハイドロコロイドの有用性について述べる．また，食塊レオロジーおよびテクスチャーの生体計測に関する著者らの最新の研究内容について紹介する．これら一連の研究の目的は，従来のバルクレオロジーおよび感覚評価を補完する方法として，咀嚼および嚥下のしやすさを表す新たな客観パラメータを見出すことにある．
