Abstract

Propolis is a resinous substance collected by honeybees from different plant sources, which consequently determine its chemical composition, particularly that of the phenolic constituents. According to their phenolic profiles, different types of propolis have been defined, such as poplar or Pacific. The aim of this chapter is to give an up to date overview of the available data on the phenolic composition (flavonoids, phenolic acids and other phenolic compounds) of different types of propolis.
