Abstract

Nutrition education is more effective when potential psychosocial mediators of diet-related behaviors, such as attitudes toward change and perceived benefits and barriers to change, are addressed in the design of the curriculum. The objectives of this study were to examine the attitude of SNAP-eligible adults toward the role of meat in the diet and to identify barriers to planning meals modeled after the DASH (Dietary Approaches to Stop Hypertension) diet that emphasizes plant protein sources.
