The Influence of Chinese and Dutch Culinary Culture on Indonesian Culinary. The Indonesian nation is a nation that is rich in spices which then attracts a lot of attention among other nations. Because of this wealth, the Indonesian people themselves have many arrivals from other nations which from their arrival have had an influence in the Indonesian culinary field due to acculturation and cultural assimilation. This research uses descriptive qualitative method through literature study. It is known that the cultural influence brought by the Chinese and the Dutch had a great influence in the culinary field in Indonesia which until now still persists where the culture and culinary from outside Indonesia are acculturated into a new culture which then creates a unique culinary Keywords: Chinese cuisine, Dutch, culture, acculturation, influence
