Abstract

Products with carob in Indonesia have started to be known by the public as the main ingredient in frozen dessert product mixes such as ice cream or gelato which are already sold in e-commerce. This carob content can be consumed for health reasons for people who are low in gluten, low in sugar, allergic to nuts, without caffeine, and low in calories. The sugar content in carob fruit has sucrose, glucose, and fructose, protein content, low fat content, and high dietary fiber content, and a source of vitamins in the form of B6, E, D, and C which are healthy alternatives to chocolate. carob has the opportunity to become a business with a capital requirement of IDR 45 million with a payback period of 9 months.
