Abstract
AbstractRationalization and restructuring within the UK dairy industry since the 1980s has left regions, such as South West Wales, which previously hosted considerable processing activity, with a much reduced sector. While retaining a significant milk producing capacity, the region has lost much of the added value activity represented by dairy processing. Trends within the UK sector as a whole continue in the direction of greater centralization in production and distribution, and increasing operational scale, R&D, and innovation activity. However, while some large corporate processors remain in the region, small‐scale and micro‐scale dairy processing activity has also been developed. This paper examines how general restructuring processes have impacted on the industry in South West Wales, and at local responses, which have included the development of new businesses, new product ranges, and other local innovations. The paper discusses how strengths in the dairy industry of South West Wales are being utilized in response to the continuing process of restructuring that is taking place in the industry. The role of public sector actors in promoting and regenerating the sector is examined, and included, along with other territorial characteristics, as an important dimension in supporting the pattern of innovation and development in the region.
