Abstract

Galactose-alpha-1,3 (alpha-gal) is a oligosaccharide found in non-primate mammalian cell membranes. Humans have recently been recognized as having severe delayed hypersensitivity reactions consequent to ingestion of alpha-gal-containing foods in the form of mammalian meat products (i.e. beef and pork). Primary sensitization is thought to occur via tick bites. The Lone Star tick, Amblyomma americanum, is considered a vector and is commonly found in Missouri.
