Abstract

The essential structural characteristics of biological membranes are by now well known. Membranes consist largely of amphipathic molecules (lipids and proteins) which spontaneously aggregate in such a way as to expose their polar parts to water while at the same time creating a nonaqueous interior for the nonpolar parts.
