Abstract
An enzyme which forms di-D-fructose 2',1:2,1' dianhydride (difructose anhydride I) from inulobiose by the reverse reaction of the partial hydrolysis of the α-2,1'-linkage of the dianhydride has been reported from the mycelia of Aspergillus fumigatus. This note deals with the characterization of the enzyme and suggests ist possible role in inulin degradation
