Abstract

A global entropy balance equation is derived for a microbiological system in order to provide a new insight into its macroscopic evolution. In particular, the power-time curves, such as those obtained by microcalorimetry, inform us on the term of the outward flux of entropy, and the biomass production rate informs us on the entropy production term. The resulting variation of the structural entropy is discussed in the context of the synthesis of new cellular material. The experimental application concerns certain data of the growing of the strain Serratia marcescens in a minimal glucose-limited medium.
